About the Recipe

Pumpkin spice and everything nice make up the ingredients of this perfectly fall pasta. Whether you mix by hand or machine, enjoy the spoils of your labor with the perfect pasta pairing and Halloween movie.

Ingredients

2 cups + 1/2 cup all purpose flour

1/2 tsp salt, finely ground

Optional: 1-2 tsp ground cinnamon

3 medium eggs (whole)

1/2 cup pumpkin puree - NOT pumpkin pie filling .. unless a dessert vibe Is what you're going for

  • Optional: Strain extra moisture out of puree with a cheese cloth to reduce amount of additional flour needed during kneading process

1/2 tbsp olive oil

1/2 tsp pumpkin spice extract (I prefer Watkins brand)

Instructions

Step 1

I like to use a stand mixer for this recipe to make my life easier but I'll also include hand kneading instructions below for the try-hards.


Mixer instructions: Using the dough hook attachment on your mixer, add all dry ingredients to bowl and start mixing at a low speed. Add the pumpkin spice extract, pumpkin puree, and olive oil as the machine mixes. Begin adding eggs one at a time, making sure shells don't enter the bowl. As the dough kneads, it should begin to pull away from the sides and bottom of the bowl. If it's sticky, add one tablespoon of flour until dough does so, or doesn't stick to your finger when you poke or pinch it. Knead in the mixer for at least 10 minutes.


By hand: Clean a large surface on your counter and pour 2 cups of flour and salt into a pile and mix gently (optional: add the ground cinnamon at this stage). Gently form a "well" in the center of your dry ingredients pile, meaning a bowl-like shape will form in the center. The flour will act as a barrier so your wet ingredients don't spill out. Add all wet ingredients to your well, then mix with a fork, slowly incorporating dough from the sides of your well. Once dough begins to form, knead by hand for at least 10 minutes (seriously, set a timer). If dough sticks to your hands, add 1 tablespoon of flour at a time. until dough no longer sticks.


Step 2

Wrap dough in saran wrap and chill in fridge for one hour.


Step 3

Remove dough from fridge, allow to rest at room temperature for at least 20 minutes.


Step 4

Roll into your favorite shapes, boil for about 3 minutes in a well salted pot, and add your favorite sauce. Who says pumpkin spice just has to be for lattes?!
